The "HFU Spirit" is produced here

In the HFU distillery, everything revolves around beverage technology. Here, students transform orchard fruit into delicious apple or pear brandy, the “HFU spirit”.

But that's not all − liqueurs, ciders and beers are also produced in various projects.

Purpose of lab

Internships/student work: Numerous smaller student projects take place each semester as part of project work, coursework or theses. In the HFU distillera the focus is on technology, taste and sustainability

It's an all-round experience which students taking the Beverage Technology module have been offered for over 10 years at HFU, and that means - first, out into the fresh air!

Working in partnership with the Town of Villingen-Schwenningen, the BUND nature organisation and the Environment Centre, the students cultivate and maintain the orchard and in autumn they harvest the apples. In the distillery the fruit is processed becoming the “HFU Spirit”.

The copper still is the heart of the distillery, but students do not carry out standard experiments and processes, they also make gummy bears, carry out research on the production of natural flavours and attempt to distill schnapps from spruce needles. Self-brewed beer is also turned into “beer brandy”.

The varied tasks of the product group include planning product tasting and the marketing of the product, including designing an annual vintage label for “HFU Spirit”.  However, this special “tipple” cannot be bought in the lab − it is only given away as special gifts.
